My family loves this recipe and we had it again tonight for dinner, so I thought I would share. Very healthy and oh, so delicious! You'll be craving it too!
Herbed Salmon Recipe
2 Salmon Filets
1 Lemon
1 Shallot, minced
1 T. Fresh Dill, minced
1/2 T. Fresh Thyme, minced
1 T. Garlic, minced
1 T. Olive oil
pinch Cayenne
pinch Sugar
Kosher Salt
Fresh ground black pepper
Spray your baking dish with Pam (I like my 8X8 Pyrex dish for this). Place salmon in the baking dish . Make sure you put the skin side down if yours has it. (Note: I like to buy my fillets from the seafood counter with the skin on and they're cheaper!)
Preheat oven to 350 degrees (F).
Rub Salmon with a bit of olive oil. Sprinkle with kosher salt and pepper.
Zest lemon, then juice the lemon. To the lemon juice and zest, add the shallot, dill, thyme, garlic, cayenne, and sugar. Stir to combine. Spoon mixed topping over top of salmon filet and pour remaining lemon juice over filets. Bake for about 30 minutes or until filet is light pink and flakes easily when forked.
This is a very light and tangy version of fish and will be well received even by those who normally do not like fish. My 2 year old son loves it! I like to serve it with roasted asparagus or salad and bread. Enjoy!
